The inspiration for Six of One was sparked by a love of coffee, and all things local. We roast locally in Toowoomba, the beautiful regional city sitting high on the Great Dividing Range in rare air, with a style of its own. A place where the bush meets the big smoke.
We roast beautiful, specialty coffee from the freshest, highest quality coffee beans that we source internationally, from small lot farms.
We aim to deliver a stunning coffee experience for our customers, whether they are enjoying brunch with friends in the city or savouring the peace and quiet of the campfire in the outback. Because let’s be honest – having a great cuppa makes every day a whole lot more enjoyable!
The Six of One Roastery Door offers an immersive coffee experience, where you can sample our big, big coffee menu regardless of whether a Flat White or a Magic is your poison. Or you can take home our coffee and brew it the way you want, when you want it.
We will help you brew an amazing coffee wherever you are – over the campfire or in the kitchen. Or help you become an expert barista using a café quality espresso machine in your own home.
We make it easy for you, whether you want to enjoy your coffee in the big smoke or the bush.

The Six of One team have brought together knowledge and experience from all over the globe to roasting great tasting, specialty coffee in regional Queensland.
JASON & LUCY
Owners
Jason & Lucy are the parents of the six children that inspired the Six of One name. As COVID-19 refugees, Jason & Lucy have settled their family in Toowoomba, Queensland after juggling life between Australia and Portland Oregon, drawing inspiration from Portland’s outdoor lifestyle, coffee roasteries & micro-breweries.
Having lived out of a suitcase for 25 years as a software executive and spending so much time away from his family, Jason dreamed of pursuing his passion project – roasting and serving amazing coffee, contributing to his local community and being a part of the thriving Darling Downs produce scene.
Jason works daily in the Six of One business, but takes the time to be fully involved in his kids’ lives, and enjoy Toowoomba life - mountain biking, practising yoga and climbing Tabletop in his spare moments! Lucy’s day job is in law, but behind the scenes she contributes to the creative elements of Six of One.
