Our Coffee
Six of One coffee is roasted in Toowoomba with love, for both the big smoke and the bush.
We roast beautiful, specialty coffee from the freshest, highest quality coffee beans that we source internationally, from small lot farms.
We aim to deliver a stunning coffee experience for our customers, whether they are enjoying brunch with friends in the city or savouring the peace and quiet of the campfire in the outback.
SOURCING
Great coffee starts with great green beans. We source only the highest quality green beans internationally, mostly working with micro-lot farmers focussed on small batches of the highest quality beans. We are always evolving and exposing our customers to new coffee experiences – whether this is through roasting seasonal varietals or experimenting with new and interesting beans.
CUPPING
This is the really fun part of our job! At its simplest, cupping is the way we taste, evaluate and compare the aroma, flavour, quality and potential of a given coffee. This takes a load of time, but we feel it is one of the most critical things we do. Our customers should only be drinking coffee that we would really love to drink ourselves. Our team has many years of experience and most of the coffee we try actually doesn’t pass muster! We then roast it, with only the best of the best making its way to our customers.
ROASTING
Our head roaster has spent many years perfecting the dark art of roasting. The roast profile for a delicate filter is vastly different to the roast profile for a head kicking espresso. The aim is a perfect balance of body, sweetness and acidity for every roast. Our state of the art Diedrich roaster ensures a perfect consistency between all of our batches. This all happens in our Toowoomba roastery, where our customers can experience first hand, the love and care that goes into producing each batch of coffee.
BLENDING
We spend a lot of time working on our blends, testing, tasting and tweaking to ensure the body, sweetness and acidity are spot on. Likewise, we will only ever showcase single origins that are of the highest quality where the beans are the hero.
FRESH, FRESH, FRESH!
Oxygen is the enemy of great coffee. We take great pride in preserving coffee freshness by quickly storing each roast in bespoke airtight containers and then packing into our premium bags with one-way valves. All our coffee is stored in a controlled environment to ensure it’s at its absolute best when it arrives in the hands of our customers.
